Being so bored of non spicy food (being an india) , I experimented a non oily sub for a nice veggie dish.
Recipe
Eggplant - 1 large
oil
salt
Large dried red chilles(cut green chillies will do)
onions
Coat the eggplant with oil.
Poke some holes in the aggplant and then bake teh eggplant( In india we cook the eggplant over file and keep turning the veg till the entire veg is cooked )- The outer coat will become dark and flaky.
Wash the eggplant and remove the skin , mash the eggplant .
Chop onions , burn the dried red chilleies over fire (or get chopped green chilles)
Put the mashed eggplant in a pan and add salt, onions , crushed red chiiles(or cut green chilles) ,come cumin powder , garlic powder and let is cook for some time , till the eggplant becomes soft.
Ready for Day 2 and 3
