Just wanted to leave a new recipe.
Try spaghetti squash. After cooking it in the oven( or boiling),
you scrape out the squash (which looks like spaghetti .. hence
the name). Use a little tomato paste or diced tomatoes on top,
add spices. It's GREAT!
To cook a
spaghetti squash:-
Slice spaghetti squash in half lengthwise. Scoop out the seeds
with a spoon and clean as you would a pumpkin. Now you have 2
options ...
1.) Place, cut side down, in a baking dish. Add enough water to
come 1/2-inch up the sides of the baking dish and cover with
aluminum foil. Bake for 45 minutes, until the squash is easily
pierced with a paring knife. Turn squash over and cover with
foil again and continue to cook another 15 minutes, until the
squash is very tender
OR
2.)Completely submerge 1 half at a time, in a large pot of
boiling water and cook for about 20 minutes until the inside is
just tender to a fork and pulls apart in strands. (Cook's Note:
It is better to undercook if you're not sure.) Remove, drain and
cool with cold water or ice bath to stop the cooking.
