Substitution to Cabbage for Cabbage Diet

 

If you're sick of cabbage... for this diet

OK - I make 3 different soups, one for days 1,2, one for 3,4 and one for 5,6. I find that although is means a bit of cooking its better than the monotony of cabbage cabbage cabbage. Plus, I find that the soup doesn't keep for more than 48 hours anyway.

So here are my 3 favorites - I'm guessing everyone knows how to cook so here are just the ingredients...let me know if you want more instruction...

1) Ratatouille Soup
Tin tomatoes, courgettes, peppers, aubergine (eggplant), onions and lots of garlic!

2) Spring Vegetable
Leeks, spinach, watercress, celery, broccoli, onions bouillon

3) Winter vegetable
Onions, leeks, carrots, Savoy cabbage, Swede, parsnip (small amount), vegetable stock

The basic principle for each is to fry the onions/garlic/leeks gently (fry-light of course!) then add the "hard" vegetables and stock/tomatoes/bouillon, then the soft veggies! Salt and pepper to taste. Fresh Basil is a good addition to the first one - or chillis if you like it hot...fry them with the onions.

You can also use kale. Seriously it gives you the same effect, you lose just as much or even more in my case. Plus it tastes really good.
If you puree it it looks nasty but the flavor is incredible.

Give it a try if the cabbage aspect of this diet is making you cave.
