Veggie Diet Breakfast Magic-Zucchini Cakes & Mushrooms Grilled

 

We discovered how to  make breakfast on all-veggie day delightful...with zucchini-cakes! here's the recipe:

1 zucchini shredded and pressed between paper towels and lightly salted
1 carrot shredded
a spoonful of minced garlic

combine in a bowl,
spray a non-stick pan with some light oil spray,
make flattened patties out of the veggie mix,
fry up on the pan, add s&p as desired

eat with all veggie salsa!

bon appetite!

oh and...soup tip...blend up the cabbage soup with an immersion blender - much more edible!

A much easier one is large field mushrooms grilled and filled with warmed cherry tomatoes. With Spring onions if you like and seasoning. Really filling if you get decent sized mushrooms.

The other thing people don't realize is that you don't have to eat the potato in one sitting. Have some of it boiled with mushrooms, onions and tomatoes for brekkie and it doesn't even feel like you're dieting!
